Palm Coast Tijuana Flats targets Dec. 26 for soft opening

The Tex Mex restaurant, which was expected to open about a year ago, has a new franchise owner.

About a year later than expected, and with a new franchise owner, a new Tijuana Flats restaurant will open at 5890 State Road 100, Suite 103, in Palm Coast.

Franchise owner Joe Jeffries said his group is targeting a soft opening on Dec. 26 for the Tex Mex restaurant.

“We’ve got the equipment all in place. We’ve got a bunch of contractors in here right now working with electrical,” Jeffries said earlier this week. “We’re just getting a mural put on the wall and some graphics and hopefully our (front of store) signage will come in. There has been a lot of delays, a lot of hiccups. But it's coming along now.”
